Gluten free banana bread with just shy of rotten bananas – it’s the best kind of banana bread. The bananas for this recipe are black. I’m talking, rotting, soggy and mushy black. Don’t use the bananas that are black flecked and staring to turn; no, use the ones that were rotten yesterday. This banana bread is moist and full of flavour, but my favourite, it’s gluten free!
