Gluten free Wendy’s spicy chicken is here. Finally. I love, or loved rather, Wendy’s spicy chicken. It was my go-to on car trips or on long study nights when I was in university. This culinary classic is a beauty. Not for a Celiac, however. This twist on the spicy chicken will make your heart sing – just be sure you add mayo. Okay, let’s get cooking!

Ingredients

  • 2 large chicken breasts
  • 1/4 of a cup of gluten free flour
  • 1 egg
  • 1/2 of a cup of rice breadcrumbs
  • 1 tablespoon of franks red hot (I used buffalo)
  • 3 teaspoons of red chili powder
  • 1 cup of canola oil
  • 4 gluten free hamburger buns
  • 4-6 pieces of lettuce
  • 2 tablespoons of mayo

First, gather all of your ingredients.

Lay out 3 bowls. In one, the flour and 1/2 the red chili powder, in another the raw egg whisked with the franks and lastly, the third bowl gets the rice breadcrumbs and the rest of the chili powder.

In a large pan, pour in the canola oil and start to heat on low.

Cut each chicken breast into 3 or 4 (that’s what Wendy’s does, right?). Haha…I’m so funny.

Line your bowls up – flour, then egg and lastly rice breadcrumbs.

Take each piece of chicken and lightly cover in flour then dip in the egg. Step three, cover with rice breadcrumbs

Time to fry up the chicken. 3 pieces at a time – you don’t want to crowd the pan – lay in the chicken into the hot oil. Cook for about 3-4 minutes per side, yet turn every minute to prevent burning.

Let them cool on some paper towel for about 1 minute

Get your buns ready (gluten free, of course).

Load with mayo and lettuce. Oh, and eat with steak fries!
