Recipe: No Bake Peanut Butter Cookie
No bake peanut butter cookies. These are the absolute best. Really. Protein, sweet, and a tad salty. So good.
Going gluten free has been so good. Not only do I feel great, but I’ve lost a couple of pounds, too. I certainly won’t complain about that. The one thing I miss most is cookies – chewy, gooey cookies. These totally fill that craving and they are healthy, ta-boo!
Ingredients
- 3 1/2 cup of oat flour
- 1/2 teaspoon of salt
- 1/2 cup of honey
- 1/3 cup of agave syrup
- 4 tablespoons of almond milk
- 1/4 cup of white chocolate chips and dried cranberries
- 1/2 cup of peanut butter
First – gather all of you ingredients. If you want these to be gluten free, you need to use wheat free oats (odd, how they don’t simply say gluten free). Anyway, once you’ve got all of your ingredients, it’s time to get out your food processor.
I know I’ve said it before, but this appliance is one of my favourite. 14 cup KitchenAid food processor. Get one!
Take your 3 1/2 cup of oats and turn it into flour using your food processor.
Next up, combine the peanut butter, agave, and the honey – melt in the microwave slowly. Stir often.
Then, stir in the salt, milk, and oat flour. Mix well.
Gently add in the dried cranberries and white chocolate chips.
From into cookie shapes – press with a fork and let them set in the fridge for about 15 minutes.
Time to eat!
