Recipe: Apple and Carrot Salad
When I was at the grocery store last week we picked up about 5 gala apples and a 2 pound bag of carrots – the intent was to use them in juices. That didn’t happen. Instead of letting them go bad, I checked out the pantry and found cranberries and pecans – perfect. Apple and carrot salad it is!
Ingredients
- 4 gala apples
- about 1.5 pounds of carrots
- 1 1/2 cups of dried cranberries
- 1 cup of chopped pecans
Dressing
- 1 cup of mayo
- 1/4 cup of sugar
- 1/8 cup of apple cider vinegar
First – get your ingredients ready.
Slice the apples into match stick pieces and put in a bowl – set aside.
Grate the carrots – add to the bowl of apples.
Add in the dried cranberries and pecan pieces – stir well.
Get the dressing ready. Mix the 3 ingredients together well and then add to the salad.
Done!
Eat a bowl and put the rest in the fridge for lunch – it’s hearty, filling, and healthy.
