Recipe: Beat the Monday Blues

Beat the Monday blues. Mondays are hard sometimes and we need to power through them. I work shift-work so it’s not every often that a traditional Monday is my Monday, in fact, today it’s my Friday. Things should be wonderful then, right? Well, I work within a traditional Monday-Friday organization and today feels like a real Monday. Meaning, a lot of work ahead (yet it’s a 3 day week for me). Time to get organized, ensure I have good food in my fridge and I’m ready to take on whatever is thrown my way.

It’s time to beat the Monday blues.

How are we going to do that? By sharing some awesome recipes that I plan on revisiting this week. The berry pineapple juice above is a surefire way to start the week. For lunch, perhaps some deviled eggs or a power packed salad.

For dinner this week, I’m thinking easy make-ahead meals that will kick Monday to the curb (okay, Monday really isn’t that bad).

And, and yes – pizza can be make ahead, since all you do is get the ingredients ready and it’s one quick meal.

Okay, now that you’ve got some recipes to get through this hazy Monday it’s time to tackle life and show it what you’ve got. October for me is quite busy and the best way for me to stay on top of feeling overwhelmed is to stay organized. Food keeps me going and unless I plan ahead I’ll end up eating junk. When I eat junk the Monday blues turn into a week of blues and massive headaches. Nope, not for me. For me I choose to stay balanced, hydrated and ensure I’ve got some time for me. Take a bath, do some laundry and get ready for the week because it’s going to rock!
