Recipe: Beet and Apple Salad
Beet and apple salad – with feta and homemade balsamic dressing. Delicious. This is the last salad in the seven sensational spring salads, be sure to check out the rest if you haven’t already. Love beets? This beet stacks, too. So good.
Ingredients
- 4-7 beets
- 3-4 apples
- 1 cup of crumbled feta
- a few sprigs of parsley
Dressing
- 50-60 ml of balsamic vinegar
- 90-100 ml of olive oil
- 1 teaspoon of Italian seasoning
Gather all of your ingredients and set the oven to 425. First, peel your beets (4 big ones or 7 smaller ones) then wrap in foil and bake for 45-55 minutes at 425 or until tender.
While the beets are roasting, make your dressing. Take out your shaker cup…I love this oxo (or is is xox?) one, it came free with our salad spinner! Mix all the dressing ingredients and shake up!
Next, let the beets cool.
Cut the apples and the beets into chunks. Crumble the feta and then mix in a bowl. Add the dressing until the salad is well dressed…you’ll probably have some extra. Top with a bt of parsley for presentation.
Done!
Eat up.
This salad is so good – and really good the next day.
