Black bean burger bombs are a take on my black bean burgers. This time, however, we stuff them into onions and cook them over the campfire! They’re going to be super good and full of flavour. I made them ahead of time then put them in the freezer – that way, they help keep the other foods in the cooler cold. Then, in the evening, after we’ve set up our campsite, just in time for dinner, they’ll be unthawed a bit and ready for the fire. Time to get cooking!

Ingredients

  • 2 cups of black beans
  • 3/4 cup of cooked brown rice
  • 1/4 cup diced red pepper
  • 3/4 cup of diced red onion
  • 2 cloves of garlic, chopped
  • 1 teaspoon of cumin and chili powder
  • 3/4 cup of corn
  • 2-3 tablespoons of olive oil
  • 1/4 cup of cilantro
  • 2 whole white onions

Four – cut open the onions. I found it best to run them under water so they separate easier.

Five – move the cooked beans to a bowl. Let cool for about 4 minutes.

Six – add in the corn and cilantro. Mash.

Seven – stuff the onion with the black bean burger mix.

Eight – wrap in foil and cook for about 15-20 minutes in the campfire.

That’s it, that’s all! Talk about a good meal. The best part is you can make them ahead of time. We love camping and I’ll admit my cooking skills are at a bit of a disadvantage when we’re out and about in our Boler. Prepping meals ahead of time is the best way to go. Happy Monday – thanks for visiting. See you again soon.
