Recipe: Black Bean Burgers
Black bean burgers – perfect for meatless Mondays. Not only are these filling and healthy, they are also good for the environment. Eating less meat means you’re using less resources. Eat up and enjoy. If you’re looking for another burger recipe, you should try 3ten’s stuffed turkey burgers, or another meatless meal, rice pasta. Have fun cooking.
Ingredients
- 2 cups of black beans
- 3/4 cup of cooked brown rice
- 1/4 cup diced red pepper
- 3/4 cup of diced red onion
- 2 cloves of garlic, chopped
- 1 teaspoon of cumin and chili powder
- 3/4 cup of corn
- 2-3 tablespoons of olive oil
- 1/4 cup of cilantro
Toppings
- 1/4 cup of cilantro
- 2 tablespoons of mayo
- 2 tablespoons of salsa
One – gather all of your ingredients.
Two – add the 1/2 the oil into a warm pan. Heat the oil and then add in the onion, peppers, garlic, cumin, and chili powder. Cook for about 2 minutes – and keep stirring.
Three – add the rice and the beans. Cook for 5 more minutes.
Four – move the cooked beans to a bowl. Let cool for about 4 minutes.
Five – add in the corn and cilantro. Mash.
Six – shape the mashed bean mixture into burger shapes. Place on parchment paper and cool in the fridge for 15 minutes.
Time for the toppings!!
Seven – get out the mayo and salsa. Mix together. So good.
Okay…time to grill them up!
Eight – put a bit of the remaining oil into a pan and gently place the burgers in the pan.
Nine – flip after 4-6 minutes.
Ten – place on bun and top!
Done.
