Recipe: Chipotle Hummus
Chipotle hummus – such a great recipe to make for a party or for snacks for the week. Packed with protein and flavour, this recipe is a sure pleaser.
Ingredients
- 2 cups of black and white beans each
- 4 tablespoons of cilantro
- 2 tablespoons of lime juice
- 1 tablespoon of spicy oil
- 3 dashes of chili powder
- 1/2 teaspoon of cumin
- 1-2 chipotle chilies
First up – gather all of your ingredients. If you’re like me, and you’ve made the beans yourself, be sure you’re using ones that are well cooked. I’ve taken beans off the stove when they’re not quite done and believe me, they do not work in hummus.
Chop your cilantro up and roughly chop up the chipotle pepper (or peppers…depending on your spice level).
Put everything into your food processor. I absolutely love my Kitchen Aid 14 cup – such a great birthday gift. Mix on high for about 2-3 minutes. Then, go a bit at a time until it reaches a smooth yet textured consistency.
Once it’s all mixed, taste. Need salt? Add it and remix. Is it good? Then you’re done.
That’s it. Eat. It’ll keep in the fridge for 4-5 days.
