Recipe: Easy Gluten Free Waffles

Easy gluten free waffles are the perfect weekend treat – we make a whole batch at a time and eat waffles all weekend! It’s awesome. Don’t get me wrong, we eat other food, too. Haha. These waffles are light, fluffy, and are the perfect vessel for peanut butter or honey. Okay, let’s cook up.

Ingredients

First up, yes, this is a boxed mix, hence the easy part of the recipe. I first found these about 2 years ago, and while I don’t usually talk about the price of groceries, the box used to be $4, now it’s up to $6.50, yet still worth it.

Okay, grab a box and get started. The package calls for 1 1/2 cups of water, yet I usually add just a splash or two more. And, follow the box when it says to let it stand for about 10 minutes. Mix up, then while it’s sitting get out your waffle iron and make a coffee.

Then, spray your pan and fill with batter. Our waffle iron takes a full 1/4 cup and the box makes about 12 when I use the 1/4 cup, which is perfect for 3 breakfasts for two.

We usually make four then eat – then when we’re done eating I’ll make the rest. This way, we eat when they’re hot.

I like mine with peanut butter, fruit, and agave. So good.

These waffles are light, fully, and so easy to make. Give them a try, even if you’re not gluten free!

These waffles will keep in the fridge for about 5 days, and anything past that, it’s best to freeze them. Bryce likes his reheated in the toaster and I’m a fan of tossing them in the oven under the broiler – keep an eye out, though, they get toasty under the broiler (I like it!).
