Kale Burrito Bowl: 3ten.ca

Kale burrito bowl is the perfect way to eat clean and still get all the flavours you love. Low in carbs and high in taste, this will be your go-to burrito bowl when you’re on a bit of a health kick, promise!

Okay, let’s get started.

Ingredients

  • 1 cup of quinoa, uncooked
  • 6-7 cups of chopped kale (about 1 large bunch)
  • 1 small red onion
  • 2 cups of black beans
  • 1 cup of corn

Dressing

  • 1/4 cup of cilantro
  • 1 clove of garlic
  • 1/4 cup of lime juice, sriracha and water
  • 1 teaspoon of agave syrup
  • 1/2 teaspoon of cumin
  • salt and pepper to taste

First up, cook the quinoa.

Now, get that kale washed and chopped. Let it dry a bit while we make the dressing.

For the dressing, chop the cilantro and mince the garlic. Then, mix all of the ingredients in a dressing shaker and shake away. Let it sit.

Once the quinoa is cooked, mix it with the beans and corn. Then, add in the diced onion and chopped kale. Toss in the dressing and you’re all set!

I don’t wait for the quinoa to cool down, it’s good warm.
