Tired of plain chicken? Roll your sleeves (and your chicken) up and get ready for this delicious dish. Pinwheel chicken here we come, let’s get cooking.

Ingredients

  • 2 chicken breasts
  • 30 grams of goats cheese
  • 2 cups of fresh spinach
  • 1/2 of roasted red peppers (I was lazy and couldn’t find the jar kind…so I used sun-dried tomatoes…hi, and welcome to 1992).
  • 2 tablespoons of olive oil

As always – gather all of you ingredients.

Now, place some plastic down, pound out your chicken. I put both breasts together…you could do them individually if you like. Layer on the cheese, spinach, and your red vegetable.

Time to roll. Do this step carefully. Roll using the plastic and squish or squeeze when rolling to ensure it’s tight and not lose…it’ll fall apart if it’s not sung. Poke with skewers (this will help them stay together). Cut.

Looks so good! Lay down on a baking sheet that has been brushed with olive oil and cook at 400 degrees for about 20-25 minutes, until chicken is cooked.

Take out and eat. So good.
