Sour cream mashed potatoes are the perfect side dish to any winter meal. Roast? Lamb? Or even black bean burgers – yes, these potatoes are creamy and delicious. Try them today!

For this recipe, I doubled it because I used it for both a beef stew I made for our neighbour and for our thanksgiving meal. I never know what a normal serving of mashed potatoes looks like because I just love them so much – I think I eat like 2 or 3 servings. I could live on potatoes. Oh, and cheese. Yes, potatoes and cheese. Okay, enough of that…time for the recipe.

Ingredients

  • 7 russet potatoes
  • 1/4 cup of sour cream
  • 3/4 of a stick of salted butter
  • 1-2 tablespoons of milk (if potatoes are thick)
  • 5 green onions

First up, gather your ingredients. I like to use the rich sour cream since it has a higher fat content and less sugar. Plus, it’s creamer.

Wash the potatoes and boil them with the skin on. Boil until they are soft, about 20 minutes. While that’s happening, chop the green onions. Set a small handful aside.

Then, drain the potatoes. Mash all of the ingredients together.

Dish out and top with the small handful of green onions you put aside.

Yes, I know this is just a side dish, so put a slice of turkey or a small cut of lamb on your plate to make it look like you know what dinner consists of – then just eat potatoes and more potatoes. Don’t eat like that all the time, but once it a while, it’s okay to indulge on the items you love. I’m so grateful that potatoes are gluten free, I would be so sad to not be able to eat potatoes.
