Recipe: Spicy Whole Turkey
Spicy whole turkey for Thanksgiving! Who’s in? I am! This recipe is quite easy and gives your whole turkey a bit of kick this November. When I used to teach in Dallas, Texas, Thanksgiving was amazing – why? Because we got a whole week off! That’s how a worn out teacher thinks…time to catch up on laundry, cleaning the house, grading papers, holiday shopping, the 1343537 emails in my work inbox. The week was jam packed and I was excited to get up because I could accomplish so much in a day when I wasn’t teaching.
Okay, enough about that. Back to the turkey! It’s recipe time.
Ingredients
- whole turkey
- 8-12 dried chilis
- 2 tablespoons of chopped garlic
- 1 teaspoon of cumin
- 1/2 cup of bread crumbs (I used GF bread crumbs)
- about 1/2 cup of hot water
First, get your chilies. These are from balk barn and they were great in this recipe.
Next, measure our all of your ingredients. Soak the chilis in the 1/2 cup of hot water for about 10 minutes. While that’s soaking, clean up your turkey and get it ready on its roasting pan.
In your blender or food processor, put in all the chilis and about 1/2 the soaking liquid. Add in the rest of the ingredients – the chopped garlic, cumin and bread crumbs.
Pulse until well mixed.
Now, smother your whole turkey in the wet chili rub. Work it in! Then cook like normal.
Done – it’s spicy and full of flavour.
Cut up and serve.
Just a little note – if you make gravy with the drippings, the gravy will be spicy, too. Obviously. Maybe test it out first and have a backup. Not everyone loves loads of spice on their mashed potatoes. On the turkey, however, it’s not as big as a kick.
