Recipe: Stuffed Sweet Potato

Stuffed Sweet Potato: 3ten.ca

Stuffed sweet potato. Not only is this recipe good, it’s easy. We quite often have beans and corn in our fridge, so this recipe doesn’t even require a special trip to the grocery store. Total bonus. Oh – it’s meatless Monday and this recipe fits! Again, bonus.

It’s good for lunch or dinner if you pair it with a salad. Sweet potatoes are so good for you – you should try them.

Okay…time to stuff.

Ingredients

  • 1 large cooked sweet potato
  • 1/2 cup of black and white beans
  • 1 cup of corn
  • 3 tablespoons of cilantro
  • 4 tablespoons of green onions
  • 2 oz of cream cheese and salsa

First, gather all of your ingredients and put the black beans, white beans, and the chopped green onions in a bowl and mix.

Next, put the cream cheese and salsa in a bowl and microwave. I’ve made this sauce a couple of times – cream cheese and salsa dip and I’ve also used it on a avocado egg breakfast. It’s good.

Okay, now time for the cooked sweet potato. Open it up and cut it in half (or, if you’re like me and splitting it with your husband, I cut it to about 40/60, giving him the bigger half). Mash it a bit.

Time to top. Spoon out the cream cheese and salsa sauce and then top with the bean and onion mix. Top with some fresh cilantro and you’re all set.

So good.

You know what’s exciting?! We’re in Ottawa right now and tomorrow we’re driving to my home town – Sault Ste. Marie. Whoo Hoo! We have an excellent house sitter, so don’t worry…things are well protected. Today we plan on visiting some sites around Ottawa and remembering the city that brought us together. So romantic. We’re so happy to be here. It’s so fun.

Okay – enjoy your meatless Monday and have a great week – we have wonderful things coming up on the blog this week, so visit again soon.
