Summer is here and what better way to welcome company or add some flare to a neighbourhood BBQ than with some summer skewers. These are easy and delicious…plus, you can make them ahead of time – bonus!

Ingredients

  • 1/4 of a watermelon
  • 300g of goat feta
  • 12-16 mint leaves
  • 1/2 a cantaloupe
  • 300g of bocconcini
  • 12-16 basil leaves
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of olive oil

First – you need to cut your watermelon and cantaloupe into 1 inch squares. You can use a baller for the cantaloupe, but I didn’t have one. Then, cut your feta into 1 by 1 inch squares, too. For the watermelon skewers, stack the feta, mint leave, then the melon on top. The cantaloupe, start with the melon, basil, then the bocconcini. Drizzle the feta skewers with balsamic vinegar and the bocconcini skewers with the olive oil. Top the cantaloupe/bocconcini skewers with a bit of salt.

That’s it – you’re done.

Ensure they are arranged nicely on a tray before you start to drizzle – and if you do make them ahead of time, put the vinegar/oil on last minute.
