Recipe: Texas Caviar
Texas caviar time. I love fresh flavours and this Texas caviar packs a punch. It’s bright, fresh, and full of colour. Let’s get to it and eat the rainbow.
Ingredients
- 1/3 a cup of olive oil and white vinegar
- 1 teaspoon of chili powder and cumin
- 1/2 a lime, juiced
- 1 teaspoon of salt – to taste
- 5 roma tomatoes
- 15oz can of black eyed peas
- 11oz can of corn
- 15oz can of black beans
- large red onion
- red pepper
- 2 jalapenos
- 1 cup of cilantro
First up, wash your vegetables and rinse the beans. Spoon out the inside of the tomatoes and dice. Also dice the onion, peppers, and cilantro.
Mix everything together – stir it really, really well and let it sit for at least 30 minutes.
Chill and eat with chips, on nachos or even with eggs. So much flavour.
You’ll be surprised how big this recipe is, but it won’t last long. It’s that good. And, the best part is, it can be made with all fresh ingredients – better for your body!
