Recipe: Chicken Souvlaki

Chicken souvlaki – it’s perfect with cucumber salad and parmesan fries. Super good, actually. This fresh marinade is easy – not really quick, since you want the chicken to soak up all that goodness overnight, yet it’s worth it. Let’s get cooking!

Ingrediens

  • 2 pounds of chicken – cut into 1 inch chunks
  • 1/2 cup of high quality olive oil
  • 2 tablespoons of lemon juice and white vinegar
  • 1 tablespoon of minced garlic and oregano
  • 1 teaspoons of salt and pepper – to taste

First, mix the bottom 7 ingredients – all but the chicken.

Add in the chicken chunks and ensure they’re all covered. Marinade overnight, or at least 4 hours.

Grab your skewers. If you’re cooking them on the BBQ, then be sure you’ve soaked the skewers. For me, I’m using a cast iron skillet.

On medium heat, let your skillet get hot and then drop in the skewers and cook each side for 3-4 minutes until all 4 sides are done.
