What could be better with burgers than potato salad? Not much gets more summer time than that…and, I can’t wait for summer! Try this turkey bacon potato salad with my turkey burgers!

Ingredients

  • a bag of little potatoes
  • 1 pack of turkey bacon
  • a bunch of green onions
  • 3 shallots
  • 1/2 cup mayonnaise
  • 2 tablespoons of mustard
  • 1 tablespoon of paprika
  • 2 tablespoons of olive oil
  • slat and pepper to taste

Start by cooking the potatoes. Boil until they are soft but firm – not mushy.

Chop the turkey bacon and shallots and sauté in olive oil until crispy. While the shallots and bacon are cooking…chop the green onions.

In a large bowl add the potatoes (I cut them in half first and make sure they are cooled), the sautéed bacon and shallots, the green onions, mayonnaise and mustard. Add salt and pepper to taste.

Once it’s all mixed, put in a serving bowl and top with paprika – it looks pretty!
