Travel: West Coast Trail
The West Coast Trail is 75km long, 231 meters high (yet you go up and down so many times) and it usually takes between 5-7 days to complete the trek. Our group did the hike in 5 days, 5 nights (noon on Thursday to noon on Tuesday). Yet with travel time to and from, it took a full 6 days. Here I’ll share some tips about our trip, what we liked, and what we recommend. Want to know about how we prepared for the trip?…

Recipe: Corn and Feta Salad
The corn and feta salad is fresh and delicious. Plus, with a bit of jalapeño to kick up the heat, it’s a great way to excite the tastebuds. Oh man, I’m so hungry. This isn’t your typical salad, yet it’s packed with flavour and, you guessed it, good on tacos. Let’s get cooking. Ingredients 2 jalapeños 1/2 a cup of feta can of corn 1/2 a lime 1 teaspoon of sriracha salt to taste First up, cut your jalapeños and drain the corn. Once you’ve…

Recipe: Jalapeño Yogurt Sauce
Jalapeño yogurt sauce is a lighter version of my jalapeño cream cheese sauce. It’s full of so much flavour and it’s the perfect chicken or taco topping. Okay, let’s get started on making this bight sauce. Ingredients 2 jalapeño 1 cup of cilantro 4 tablespoons of greek yogurt 1 tablespoon of lime juice 1/4 cup of olive oil dash of white vinegar salt to taste First, wash your jalapeños and cilantro, then add all of the ingredients into your Vitamix or food processor. Then, mix…

Recipe: Fresh Tomatillo Salsa
This fresh tomatillo salsa is bright and fresh and the perfect topping for tacos, chicken, or to eat with chips. How did I come up with this recipe, you ask! Well, I created it since the grocery store was all out of avocados. Not a single one was to be found. Seriously. I was at the grocery store and they were totally out of avocados, so I walked the produce section until I found something inspiring – tomatillos to the rescue! What are tomatillos you…

Recipe: Flat Roasted Chicken
Flat roasted chicken – the first time we had anything like this was in Mexico. Have you seen the deliciously flat Mexican chicken post? If not, you should check it out. Here I break down the chicken, remove the spine and the ribs. It’s really easy. Put the whole chicken breast side down and cut the backbone out. I cut a bit to the right, then the left using kitchen sheers and it works well. Then, you can just slice on either side and pull…

Travel: Two Weeks in Mexico
Two weeks in Mexico – well, it was actually more like 17 days, which was awesome. I’ll admit, though, it was a bit long in one place. If you venture down to Quintana Roo, Mexico for two weeks and aren’t huge beach people (like us) then rent a car and take some awesome day trips. I’ll share a few things we did while staying in Akumal (and a day trip or two). Two Weeks in Mexico Mexico in a Carry-On Hopper Experience Akumal, Mexico Tulum,…

Travel: Xel-Ha Water Park
Xel-Ha water park is an awesome water adventure park. It’s full of so many different activities – zip-lining over water, lazy rivers, and the hugest waterslide I’ve ever seen. Not to mention the snorkeling – it’s so vast and you’ll for sure see some beautiful fish. There are a few things you’ll want to bring with you, and other items you can leave at home since they’re a part of the all inclusive service. Bring bathing suit eco sunscreen water shoes phone/camera waterproof phone case…
