Easter brunch 2026! It’s time to eat – brunch isn’t a meal we eat a lot, however, usually on holidays, it’s something that’s easy and fun to undertake. This Easter, we had a delightful brunch with a quiche, salad, and some lemon-zested potatoes. Okay – let’s get cooking.

Ensure you have plenty of oven space for this brunch – the potatoes and the quiche cook at different temperatures (varies by about 65 degrees!). If needed, cook the quiche first and eat it cold, or warm it up as needed – both options work well. Oh, and you can make the salad while everything is cooking up. It’s chopping and that’s about it.
Once you have everything done, lay out and get ready to eat up. I like putting everything in white dishes to let the food pop. Often, I’ll walk by a kitchen store, and I’ll be drawn in by some stunning dishes. Then, I plan in my head how they might be used, and I find the dish distracts from the food, or vice versa. Having said that, all of our dishes are in the cupboard – if you have them on display, totally different story!
After everything is laid out, be sure you grab a plate for yourself! Fill up your dish and get ready to dig in.
I’ve made this quiche a few times, and on this round, everything was quite layered. That doesn’t happen every time, yet it looks pretty from the side. Those onions look oh, so good.
Be sure to pack up anything that’s leftover for lunch the next day. The quiche is good cold or hot, and the potatoes hold up well. Oh, and the salad is hearty enough that it’s good for a few days, too.
