Recipe: Burrito Bowl
Burrito bowls – time to spice up this Saturday. As I’ve said before, Mexican food is by far my favourite…the beans, the corn, and the cheese! Oh, and avocados. Yes, please.
Well, this recipe is quite simple. It’s a burrito in a bowl which takes away a bit of the fun of having a burrito, yet it’s good when you’re out of wraps and still feel like one. Try it and let me know what you think. This recipe will make two bowls.
Ingredients
- 1 1/2 cup cooked brown rice
- 2 cups of lettuce
- 1/2 cup of salsa
- 19oz of black beans
- 1/2 a red onion, red and green pepper
- 2 tablespoons of canola oil
- 1 avocado
- 15 oz can of corn
Sauce
- 1 cup of bueno burrito sauce
or - 1 can of enchilada sauce
- 1/2 cup of plain yogurt
- 1 can of green chillies
- 4 sliced jalapenos
- 1 teaspoon of garlic
First – gather all of your ingredients.
Slice your onion and peppers and cook in the oil. You can add a bit of chili powder if you want some extra heat.
While the peppers are cooking you can either get our your bueno burrito sauce or make the new one. Put all of the ingredients into the food processor and blend. That’s it, easy peasy.
Once the peppers are cooked, it’s time to build the bowl. Mix the rice with the salsa and put half in one bowl and half in the other bowl. Next, top with the chopped lettuce. Pile on corn and beans, then add the onion and pepper mixture. Pour on the sauce and top with an avocado fan. Done!
Eat up – so good and so easy. The sauce, which ever one you pick, is good on burritos, fajitas, or even with nachos. Oh, how I now feel like nachos…even though it’s not even 9am.
