Recipe: Chocolate Cupcakes
Chocolate cupcakes. When you’re in the mood for a little sweetness and you don’t have any butter in the house – that’s where this recipe comes from – innovation, people, innovation. Remember when I made butterless cookies? I don’t always have butter in the house and that’s when I have to get creative.
For Christmas I got these silicone cupcake liners – they are awesome! One draw back, my husband works in an environment where employees are coming and going all the time, so if I sent him with these, I’d never see them again. Other than that, they are great since they wash up nicely in the dishwasher and cut down on your need to constantly buy the paper ones.
Okay – time to bake up!
Ingredients
- 1/2 cup of flour and cake flour
- 8 tablespoons of cocoa powder
- 1/2 teaspoon of baking soda and baking powder
- 1 cup of white sugar
- an egg
- 1/2 cup of heavy cream
- 1/4 cup of canola oil
- 1 teaspoon of vanilla
- 1/3 cup of boiling water
Gather your ingredients and mix all the dry ones (all but the eggs, vanilla, cream, oil, and water) together in a bowl. In a separate bowl mix the egg, cream, vanilla and oil together. Then, add the wet to the dry. Mix well. Then, slowly add in the boiling water and mix gently.
Pour the mixture into the cupcake liners and bake at 340 degrees for 20-23 minutes.
Let them cool – don’t they look good!
That’s it, you’re done. Eat them up!
