Recipe: Coco Muffins

Coco muffins – only 5 ingredients! They are easy to make, quite healthy since they have no added sugar or flour, and delicious. Bake up today!

Ingredients

  • 1 cup of peanut butter
  • 2 bananas
  • 1/4 cup of agave syrup
  • 1/3 cup of cocoa powder
  • 1/2 cup of chocolate chips

First – gather all of your ingredients. Oh, the peanut butter…my husband loves peanut butter. So good.

Okay…another thing that makes this recipe awesome – I make it in my blender. Yup. Vitamix all the way. Add in this order and it’ll work: agave, then peanut butter, then cocoa powder and finally bananas. You may have to push the mix down a bit, but it’ll work. Blend until well mixed.

Set the oven to 350 degrees. Fill liners. These re-useable silicon liners are amazing. A sweet Christmas gift from my mom – they work wonders on these little muffins. Just a note, the muffins won’t grow or puff up, so be sure to push in the mix. Bake for 12-17 minutes then top with the chocolate chips!
