Recipe: Fresh Stuffed Avocado

Time for lunch! This healthy snack is bright, fresh, and full of flavour. Have you ever heard that you should eat the rainbow? Red, orange, yellow, green, blue and purple…in this fresh stuffed avocado recipe we’re only missing the blue. Eat up!

Ingredients

  • 1 avocado (will make 2 halves)
  • 6 heirloom cherry tomatoes, cut in 6
  • 2 tablespoons of corn
  • tablespoon of diced red onion
  • large pinch of chopped cilantro
  • 2 teaspoons of crumbled goats cheese

First – gather all of your ingredients and cut the avocado in half. Core out a bit of the middle so more of the filling will fit. Either eat it up, add it to the fresh mix, or put it in the fridge for another recipe (wrap tightly).

Next – put all the fresh ingredients in a bowl and mix. I didn’t add any ‘dressing’ since the freshness of the goats cheese and cilantro add so much flavour. You can, if you like, add a fresh squeeze of lime.

Stuff the avocado.

Done – quick and easy. Time to eat up.
