Recipe: Lentil Sloppy Joes
Lentil sloppy joes are packed with flavour and protein. Such a great idea for lunch or a quick weeknight meal. I have a few lentil recipes on the blog and I want to mention that 99% of lentils come from right here in Canada. Eat local? Yes, please do.
Okay, time to get cooking.
Ingredients
- large onion
- 2 tablespoon of oil
- 1 1/2 cup of dry red split lentils
- a package of gluten free chili seasoning
- 1/2 cup of ketchup
- 2 tablespoons of water
First, gather your main ingredients. Cook the 1 1/2 cup of lentils according to the directions. This should take about 15-20 minutes.
We eat this recipe with the biscuit recipe I shared on Monday – yet you can eat it with anything, Texas toast or even a hot dog bun in a pinch.
While the lentils are cooking, dice the onion and cook it for about 5-7 minutes in the oil until it’s nice and translucent.
When the lentils are done, drain them and add them to the pan the onions are in. Mix the chili seasoning, ketchup and the water together in a small bowl. Then, add it into the onion and lentil mix. Stir well.
Simmer for about 4 minutes and you’re done.
Dish out and eat away!
Protein packed lunch that is full of flavour. So good.
