Recipe: Mango Roll-up Snack
Fruit is always a good snack, but sometimes it’s not so much fun to eat. This recipe turns mango into a fun roll-up snack! I’m sure you’ve seen the long post on Pinterest about mango fruit roll-ups – this one is a tad different – has more balance as far as flavour, but doesn’t compromise the natural fruit goal.
Ingredients
- 3 mango
- 1 tablespoon of agave syrup
- 1/2 teaspoon of salt
First – peel and cut the mango into chunks.
Next – put them in your Vitamix and puree. This will take a bit and you might have to push down the mango with the ‘plunger’ your blender comes with. Next – add the agave syrup and the salt. Mix thoroughly.
Lay out some parchment paper on a baking sheet. Pour the puree on the lined baking sheet.
Spread the mix evenly over the parchment paper as you want it to cook evenly. Bake at 170 degrees for 4 hours. Mine took about 4 hours and 20 minutes. I would start checking on it around 3.5 hours. You want it to be cooked, but not completely dried out.
Grab your pizza roller and cut into 10 pieces.
Done!
They will keep in the fridge for about 1 week.
They make great lunch time snacks, too. Enjoy the weekend.
