One pan chicken – so good and so easy. This is the perfect healthy dinner to make on a weeknight when you need dinner quickly. Preheat your oven to 375-400 and set to roast. Now, let’s get cooking!

Ingredients

  • 8 medium potatoes
  • 2 lbs of carrots
  • 2 onions
  • 4-5 (1 lbs) chicken breasts
  • 3 tablespoons of olive oil
  • 2 tablespoons of garlic
  • 1 tablespoon of chili powder

First – wash your potatoes, carrots, and onions. Next, gather the rest of the ingredients.

Cut up the veggies into chunks then cut each breast into 3 equal pieces.

Next, lay the potatoes, then carrots, then onions, and last the chicken into the pan.

Mix the olive oil and garlic and spread over the chicken and veggies. I used a brush. Lastly, sprinkle the pan with the chili powder. Bake for 30-35 minutes or until the chicken reaches 165 degrees.
