Recipe: Spicy Pickle Grilled Cheese
Spicy pickle grilled cheese – so good and just a punch of spice. These sandwiches are made with zesty hot and spicy pickles, old white cheddar and old yellow cheddar cheese. One on gluten free bread for me and another on fluffy white Texas toast for Bryce. Let’s get cooking.
Ingredients
- 2 pieces of bread
- 1 tablespoon of mayo – not miracle whip
- 1/4 cup of shredded old white and yellow cheddar cheese
- 2 spicy pickles
First, make sure you get the right pickles. These ones are zesty and crisp.
Next, mayo the outside of the bread and shread the cheese.
In a warm pan, lay down the bread and place the pickles down, then top with cheese. Then, once you’ve got the top on, turn up the heat a bit. I put the lid on for a small bit so the cheese melts. Keep an eye on them – you don’t want them to burn.
Looking good! Be careful when you flip them – don’t so too soon means it might fall apart.
Nice – the mayo makes for a nice crispy outside. And look at all those cheese crunchies!! These spicy pickle grilled cheese sandwiches are going to be good.
That’s what you want – fully melted cheese smothering the pickle full of goodness. Sometimes I like my grilled cheese a bit on the darker side, and sometimes that’s just the way it goes with gluten free bread. It’s harder to get that softness to stick around in the bread when it’s not too soft to begin with.
I won’t lie – I was jealous of how fluffy Bryce’s Texas toast was – so fluffy.
