White bean and quinoa salad – time for lunch! This salad is full of flavour and fills you up. The cilantro and red onion add some nice colour while the beans and quinoa fill you up iwth protein. Let’s get this salad started!

Ingredients

  • 2 cups uncooked quinoa
  • 3 cups of warm water
  • 2 cups of white beans
  • 3/4 cup of chopped cucumber
  • 1 chopped red pepper
  • 3/4 cup of chopped cilantro (lose)
  • 1 chopped red onion
  • Cilantro lime chili┬ádressing (150ml, one recipe)

You can use any dressing for this salad, but I love this cilantro lime chili dressing.

First, chop up the cucumber, the red pepper, the cilantro and the red onion.

Cook the 2 cups of quinoa in your rice cooker with the 3 cups of warm water. Then, let it cool (I spoon it all out and put it in a bowl in the fridge for about 15 minutes). White beans? Check.

Mix everything in the bowl together. The, add the dressing.

Combine well.
