Easter brunch 2023 – it’s just about time for some Sunday brunch. What’s on your menu other than new socks and slinky bracelets. Anyone else get those plastic pastel slinky wrist bracelets as a kid? I loved them! They were so fun until they go squished while playing. Ah, the joys of being young – time to play!

Okay – here are the recipes for this spicy and delicious Easter brunch.

Easter Brunch 2023

One of the first things I like to do when getting ready for brunch, or any festive meal, is set the table. A little trick, I plan out all the serving dishes and then put out the flatware so I don’t forget to serve a dish – like corn salsa that’s perhaps chilling in the fridge. It helps, especially once you’re engaged with visiting guests and attending to their needs. Also, I like to keep all serving dishes white – let the food shine! Plus, then it doesn’t matter where the dishes are from, they all match!

These placemats are so much fun! And, they’re a great kick-off into spring, the start of camping season. Now, onto some of the eats.

One thing I did do, I left off the cheese on the asparagus – with the parmesan on the potatoes, I thought that was enough. The breakfast turned out so well!

The one thing I forgot to get a photo of is the runny poached egg – I was too hungry!

The potatoes, though, they’re so good! Not just a breakfast staple, but also great for dinner and I often toss leftover potatoes into salads, like chunky croutons in salads. They’re so good – bake up a batch and try it!
