Recipe: Apple Peanut Butter Burrito
Love peanut butter? Apples? A bit of chocolate?
Need a quick breakfast in the morning?
Apple peanut butter burritos are for you!!
I usually make these on a day off – each recipe makes 2 – so I make 2 or 3 recipes and then freeze them. The best part, the night before just pop it in the fridge and grab-and-go in the morning. It’s easy to eat on the way to work and beats out any processed drive-thru item you could pick up. Plus, it’s healthy, rich in protein and tastes great.
Ingredients
- 1 apple
- 2 wraps
- 1/2 cup of peanut butter
- 2-3 tablespoons of chocolate chips
Lay out your wraps. I used smooth peanut butter, but you could use crunchy for extra texture. Split the peanut butter between the two. Don’t go too close to the edges, or you’ll make a mess when rolling and eating it.
Slice the apple into thin sections and lay evenly over the peanut buttered wrap.
For a bit of a kick – who doesn’t love a tad of caffeine in the morning?? Add some chocolate chips. They add some crunch, a bit of a pick-me-up, but also they are a little treat.
Now, roll it up carefully!
I put one in a freezer lock bag and then pop them in the freezer. They keep for about 2 weeks. As I said above, when you’re rushed – pop one in the fridge the night before and you’ll have a grab-and-go breakfast in the morning! They’ll keep for about 2-3 days in the fridge.
