Recipe: Avocado Egg Bake
Avocado egg bake. It’s time for avocados! This quick and easy breakfast treat is just the protein power you need to make it through a busy day. Set and forget, it only takes about 4 minutes to prep and about 20 to bake. Okay, let’s get started.
Ingredients
- 2 ripe avocados
- 4 eggs
- dash of salt
First, set the oven to 400 degrees. Quick tip – I used convection and next time I think I’ll just stick to standard bake. You pick.
Up next, time to cut the avocados. Take out the pit and then spoon out a bit extra. You’ll see the egg on the left has a bigger pocket for the egg – that’s what you’re looking for.
Crack the egg and let about 60-70% of the egg white fall off into a small bowl. Put the yoke and a bit of the white into the avocado pocket. Bake for 15-20 minutes.
Done!
Add a dash of salt and hot sauce if you like.
Eat up while they’re warm.
