Mexican pizza! What? Yes – this gluten free Mexican pizza is so good you need to try it. I use the same crust I used in my standard gluten free pizza recipe then add the fresh and flavourful ingredients. Let’s get cooking!

Ingredients

  • prepared pizza crust
  • 250g of pizza mozzarella
  • dash of olive oil
  • 1 teaspoon of chili powder
  • can of corn
  • 1 ripe avocado
  • can of black beans
  • 2 teaspoons of cumin
  • 1 teaspoon of paprika
  • 2 tablespoons of fresh cilantro
  • 1/2 a cup of water
  • splash of lime juice

Set the oven to 410 degrees on bake and put the prepared pizza crust in for 7-9 minutes.

Now, let’s prepare the sauce – this is going to be a black bean sauce that’s rich in flavour. Get out your food processor and rise the can of black beans.

Once the sauce is done, time to roast the corn. In a pan with a dash of oil roast the corn and chili powder. Heat through. Once the pizza is done it’s first round of cooking, it’s time to build the pizza.

Spoon out the bean sauce onto the crust.
