Campfire avocado mash – this was our breakfast on day one while we were camping in Glacier National Park in Montana. So fun! I called ahead to see what I could bring food-wise across the border. I couldn’t bring meat or eggs. So, we stopped at the St. Mary’s Grocery Store, yet they were out of eggs. No…I was going to make Guac-Eggers. Bummer. I’ll have to make them another time. What I did find, however, was this smoked chicken breast and it’s gluten free (why it would have gluten in the first place, I don’t know). So, here we are, improvising and getting inspired by ingredients. The campfire avocado mash.

Ingredients

  • 2 glutino english muffins
  • 100g of old cheddar cheese
  • 1 avocado
  • 2 tablespoons of salsa
  • bacon (or smoked chicken breast, like I used)
  • castiron pan
  • campfire

First – gather your ingredients.

Up next, get the cast iron pan on the fire and toast the english muffins middle side down.

While the english muffins are toasting get your avocado ready and cut the cheese into small slices.

Now, sandwich the cheese between the english muffin – this is the best way to melt it. Flip every so often as to not burn the outside of the english muffin. Cook the smoked chicken in the pan.

Once the cheese is melted and the chicken cooked, open up the english muffin and mash the avocado onto one side. Top with salsa and top the other side with the smoked chicken. Close back up and you’re done!
