Fajita pasta – it’s full of flavour and also makes for a great freezer meal. Quick, make ahead dinners are sometimes the best ones. Let’s get cooking up this one pot wonder.

Ingredients

  • 2 peppers
  • 1/2 a red onion
  • jar of salsa (white corn and black beans)
  • 19oz can of black beans
  • 12oz can of corn
  • 1 teaspoons of paprika, chili powder, and cumin
  • 1 1/2 cup of broth
  • 340g of gluten free pasta

First, gather up all of your ingredients. Chop the peppers and onions.

Now, if you’re going to build a freezer meal, put the peppers, onions, salsa, black beans, corn, and spices into a bag.

Then, in that same bag, add in the broth. Freeze up.

When you’re ready to cook this delicious fajita pasta, put the bag of ingredients into a pot and boil. Then add in the gluten free pasta and simmer for 15 minutes.

Top with cheese, sour cream, avocados or feta.
