Recipe: Golden Quesadillas
Gluten Free golden quesadillas are delicious, filling, and just so good. I love mashed potatoes, Mexican food and cheese. Smash this all together in a taco shell and fry it up, you’ve got the best golden quesadillas. Let’s get cooking!
Ingredeints
- potato
- splash of milk
- 4 corn tortillas
- 2 tablespoons of mayo
- 1/2 cup of crumbled feta cheese
- cabbage slaw
- pulled chicken
- diced tomatoes
- hot sauce
First up – the humble potato. Wash and peel the potato. Dice it up small and boil it. Once the potato is soft, drain it and mash it with the milk. Add salt and pepper to taste. Now that you’ve got the mashed potato made, time to get these quesadillas frying.
Pile 1/4 of the potato mixture inside of the corn tortilla and top with 1/4 of the crumbled feta. Fold like a taco. Then, spread mayo on the outside and place in a frying pan on medium heat.
Flip carefully and cook each side until golden brown.
Top with cabbage slaw, pulled chicken and diced tomatoes.
Oh my, this looks so good. That crispy exterior with the soft and rich filling. Yes, I can’t wait to eat up.
Top with hot sauce and you’re all set. Dig in!
