Recipe: Lazy Lasagna – and it’s gluten free!

Lazy Lasagna – why lazy?  Mainly because it uses jar sauce and store bought noodles – pretty lazy, eh!

Ingredients

  • box of rice noodles
  • 2 tablespoons of olive oil
  • 3 tablespoons of garlic
  • package of spinach
  • 1 pound of ground chicken
  • jar of pasta sauce (gluten free, if you wish)
  • large container of cottage cheese
  • container of ricotta cheese
  • 1 1/2 cups of shredded mozzarella cheese
  • salt and pepper
Saute the garlic until golden brown and then add the spinach – it’ll only take a few minutes for the spinach to cook – don’t jet off to fold towels or anything!

Once the spinach is cooked, place in a bowl and set aside. Add ground chicken in the same pan – cook and cover to keep warm.

Cook noodles according to directions. While they are cooking, shred the mozzarella cheese. Then mix together the cottage and ricotta cheese – add salt and pepper.

In a 13×9 pan, add a bit (1/3) of the pasta sauce and the first layer of noodles. Then layer 1/2 the chicken, 1/2 the spinach, and 1/2 the cheese mix. Add more sauce (1/3) and layer the remaining chicken, spinach, and cheese mix.

Top off with the remaining sauce (1/3) and top with all the mozzarella cheese. Cover with foil and bake at 350 for about 45 minutes – 1 hour.

Let cool for about 10 minutes before cutting and eating.
