Recipe: Loaded Brownies

Loaded brownies. Peanut butter cups, chips, and Oreo cookies are loaded on top of these gooey fudgy brownies, and just in time for the holidays. Okay, let’s grab the mixer, set the oven (or in my case, the BBQ – yes, I made these on the BBQ!), and let’s get baking.

Ingredients

  • 3/4 cup of salted butter
  • 1 1/4 cup of brown sugar
  • 1/2 cup of white sugar
  • 3 eggs and 1 yoke
  • tablespoon of vanilla
  • 1 cup of cocoa powder
  • 1/3 cup of cake flour
  • 1/2 cup of chocolate chips
  • 1/2 cup of toppings (chips, sprinkles, cookies)

Now, I know we’ve loaded brownies before, and with peanut butter cups, yet I couldn’t resist this time – there’s just something so good about peanut butter and chocolate, eh?!

Okay, back to this recipe. First, gather all of your ingredients. With the melting of the butter on the stove, things move a little quickly, so having everything ready helps prevent any mishaps on the stove. Set the oven to 350 degrees and grab a sauce pan.

In the pan, melt the butter. Then, add in the sugars and stir with a whisk. Take off the heat. Add in the eggs – careful not to cook them!

Add in the vanilla, the cocoa powder, and then the flour. Then, back on a bit of heat, add in the chocolate chips, just enough to begin melting them.

Then, pour the mixture into a parchment paper lined 9×9 pan. Oh, and if you’re looking for various toppings, like I made, then use little tinfoil walls to separate the different brownies. And, don’t forget to spray the foil. Load up with toppings and bake at 350 degrees for 30-40 minutes – you want the brownies chewy and soft.

Once the loaded brownies are done, let them cool for about 10-15 minutes and then cut. Cut into 9 squares and then cut each square in half on the bias.

Well, there you have it – loaded brownies. They keep for 4 days in an air tight container, and you can freeze them (they’re delicious right out of the freezer, too!).
