Recipe: Pudding Cookies

Pudding Cookies – yes…they are gooey, soft, and perfect to dunk in hot chocolate.

These are similar to my cookies and cream recipe, but only because I used the Oreo pudding mix…feel free to change it up!

Ingredients

  • 3/4 cup of brown sugar
  • 1/4 cup of sugar
  • 1/2 cup of salted butter
  • 1 pack of pudding (3.4 oz) (I used Oreo pudding mix)
  • 2 eggs
  • an egg yoke
  • a teaspoon of vanilla
  • 1 cup of flour
  • 1 1/2 cup of cake flour
  • 1/4 teaspoon of salt
  • 1 teaspoon of baking soda
  • 2 cups of chocolate chips (I used white chocolate)

First – gather all of your ingredients – ensure the butter is at room temperature.

Pudding Cookies: 3ten.ca

Cream the first 3 ingredients. Add in the next 4 and mix well. Next, add together the flour, baking soda, and the salt. Slowly add in the dry ingredients. Once well combined, gently stir in the chocolate chips. Wrap the mix in plastic wrap and put in the fridge for at least 2 hours.

Spoon out, or roll out and bake at 350 degrees for 10-12 minutes.

Let them cool (or not)…then eat!

Next time, I’m going to try this recipe with chocolate pudding mix and skor bits instead of chlorate chips…or maybe pumpkin pudding mix and white chocolate chips – the possibilities are endless.
