On this chilly Thursday, I took my banana nut muffin recipe and did something amazing…I added peanut butter!

Who doesn’t love peanut butter and banana sandwiches…this is a reminder of the childhood classic. Time to bake up these peanut butter banana nut muffins.

Ingredients

  • 1 cup of sugar
  • 1/2 cup of soft butter (not melted)
  • 2 large eggs
  • 3 large (or 4 small) super ripened banana (like almost all black)
  • 1/4-1/2 cup of peanut butter
  • 2 cups of flour
  • 1 1/2 – 2 teaspoons of baking soda
  • pinch of salt
  • 1/2 cup chopped walnuts

After you gather all of your ingredients, combine the first 3 ingredients and mix well, then mash in the bananas. Add in the peanut butter. In a separate bowl, stir together the flower, soda, and salt. Fold the dry ingredients into the banana mixture, and then add nuts.

The star of this dish…the peanut butter. Get ready to bake up!
