Spinach and Onion Egg Bites
Egg bites – great for a big Sunday breakfast – or to make ahead for a busy week.
This week coming up is a busy one – our schedules don’t match up (which happens every so often) so it’s important to plan ahead to ensure we eat right to keep our energy up!
Spinach and onion egg bites are just the thing…try them!
Ingredients
- 1 large spanish onion
- 4 cups of raw spinach
- 9 eggs
- 2 tablespoons of omega oil
- salt and pepper
First – put half the oil in a pan and sauté the onions for about 4 minutes. Then add the spinach.
While that’s cooking – in a bowl, crack the eggs, all of them, and whisk together well. Beat them up!
Once the spinach and onions are done (the spinach will be wilted and the onions will have a nice rich colour) mix it together with the beaten eggs. Add salt and pepper.
Pour into oiled mini muffin tins (use the rest of the oil) and bake at 340 for 12-15 minutes – until the eggs are cooked.
Makes 24 egg bites.
Take out and eat. Or, cool and package up for the week.
They’re so easy to make, and delicious to eat!
