Banana pancakes on this fine Sunday morning. Not only are these quick and easy, they are heathy and filling. Time to get that breakfast going – make the whole house smell like perfection.

Ingredients

  • 2 bananas
  • 4 eggs
  • 1 teaspoon of cinnamon
  • about 2 1/2 cups of oats
  • 2 tablespoons of oil

First, gather all of your ingredients.

Next, mix the eggs with the cinnamon. Then, add in the bananas. Slowly add in the oats about 1/2 a cup at a time. You’re looking for a just thick batter…not too thick and certainly not runny. It will depend on if you use quick oats or not.

In a hot pan add some oil and fry up the banana pancakes. Cook about 2-3 minutes per side.

Don’t try and turn them too early, otherwise you’ll make a mess. Trust that they will take a bit of time to cook. If you’re doubling up this recipe for a brunch, you can put your oven on 200 degrees and keep the pancakes warm while you finish cooking up the rest – it’s a little trick, just to keep you on your toes.
