Beet and Feta Flatbread
- Gluten free flatbread – O’Doughs
- 16 slices of picked beets
- 1/2 teaspoon of fresh chopped dill
- 1/4 cup of crumbled feta
- 1/2 tablespoon of salted butter
- 2 teaspoons of minced garlic
- Salt to taste
First up, set the oven to 400 degrees. Then, get all of your ingredients ready. Melt the butter, chop the garlic, and the dill. Also, grab a jar of pickled beets and pull out 16 or so slices.
In a side bowl, melt the butter and add the garlic. Once the feta is crumbled, it’s time to start!
Bake the flatbread as per the instructions to start – I usually start it off with 3-4 minutes at 400 degrees. Then, once it’s ready to receive ingredients, brush with the garlic butter and then top with the beets and feta, then finish with the dill. Bake for another 6-9 minutes, until the feta starts to brown, and the edges of the flatbread are golden.
Now, slice and eat up.
Just like the flatbread from the other day, feel free to cut it up however you like. Big pieces. Small pieces, you do you.
The picked beet and the feta work well together – a bit of a tang. All in all, it’s a great lunch.
