Broccoli cheddar bacon salad – it’s so good and hearty because of the broccoli. Oh, and gluten free of course. Bryce and I celebrated our 5 year wedding anniversary this past Saturday. Well, celebrated is a loose term – I worked from 6am – 2pm, getting home around 2:20pm and Bryce worked from 3pm – 3am, and leaving for work around 2:08pm. As such, we totally missed each other and spent our 5 year apart.

When we looked at the calendar in May, trying to plan what we might do to honour our 5 years of marriage, we both sort of looked at each other…it’s been a busy summer; a few trips to Kelowna, and a few family visits, not to mention camping and getting back from Southeast Asia in May. We decided to have a staycation and simply enjoy each other. We are both off Monday – Wednesday, so the 3 days are being dedicated to good food, naps and movies.

The best part about this staycation is the food. We menu planned last week and I’ve got a few of our favourites to share with you. This Broccoli cheddar bacon salad was our lunch yesterday. So good and we ate it all up.

Ingredients

  • 2 heads of broccoli (stems and all)
  • 6 slices of chicken bacon (gluten free)
  • 1/4 cup of chopped red onions, white onions, dried cranberries and chopped almonds
  • 100-200g of cheddar cheese
  • 3/4 cup of mayonnaise
  • 2 tablespoons of apple cider vinegar
  • 1/4 cup of sugar

First, gather all of your ingredients.

Next, chop the onions into small bits and cook the bacon.

Add the onions to the bowl and then cube up the cheddar cheese. Cut and wash the broccoli and shred the stocks. The shredded stocks add texture and hearty goodness. Then, add in the cranberries and almonds.

Whisk the mayo, cider vinegar and the sugar together and add to the salad. Then, crumble the bacon and add it, too. Stir and serve.

Done

You’ll want to eat this salad right away, since you don’t want the cheese to get all soft and mushy. Eat up, it’s good.
