Recipe: Chicken Salad
Chicken salad – with yogurt and it’s gluten free! Total score. This healthy chicken salad makes use of tangy plain yogurt rather than rich mayo. Don’t get me wrong, I like mayo, it’s just that on a one-to-one comparison it’s about 10 times the calories, and let’s be honest, I’d rather eat chips and chocolate than mayo. Life is about balance and yogurt in this recipe gives me that balance. Let’s get cooking.
Ingredients
- 200g of pulled chicken (lightly seasoned)
- 1/2 a cup of chopped almonds and cranberries
- just over 1/2 a cup of Astro plain yogurt
- 3/4 of a cup of chopped celery
- 1 cup of spinach or buns
First, get out your pulled chicken. I cooked mine in the sous vide with a bit of tarragon and shallots. Next, gather the rest of your ingredients.
Ensure your chicken is pulled well.
Mix the chicken, almonds, cranberries, celery and the yogurt all together. I put in about a spoon of yogurt at at time until it reaches the correct consistency. Then, chill for about 1 hour.
Time to eat up!
Eat on a bed of spinach or on a bun like a chicken roll. Both are delicious.
