Recipe: Cilantro-Sriracha Dressing
As promised! Cilantro-Sriracha Dressing to accompany your Southwestern Salad.
This dressing is full of flavour and tastes amazing!
Ingredients:
- a bunch of cilantro
- 1 tablespoon of sriracha
- 500g of coconut Greek yogurt
- a lime
- 1 tablespoon of omega oil
First – wash your cilantro.
Why Sriracha? It packs so much flavour and heat, how do you not love it? With the California factory shutting down, you may need to find some quickly and stock up.
A little sriracha story. I was working with Sam one night and she was about 3 weeks away from leaving for school in the UK. We were talking about getting into schools and the process of essay writing, resumes, and volunteer work. She had to write an essay about what she would bring to the UK from Canada if she were only allowed to bring 5 items. What a topic! Moreover, how much fun would those be to read?! One of her items was Sriracha! Adorable. It’s events like this little one – connecting with someone over hot sauce – why I love life so much. You never know what will bring people together.
So – what would you bring as your 5 items? Ready…go!
Okay – back to the recipe. Once you’ve washed your cilantro, throw (yes, throw it in!) everything into your food processor, or in my case, my Vitamix – squeeze the lime by hand over the top.
Blend until well mixed. Taste. Add salt and pepper if necessary.
Serve on salad, or even dip homemade chicken fingers in it…totally yummy.
