Recipe: Gluten Free Corn Fritters
Gordon Ramsay inspiration number two – corn fritters. This recipe, however, is deliciously gluten free. If you read my last post, you know my dad got me this kick-butt pan for Christmas and Gordon Ramsay was to deliver it with 3 meals. Well, here’s meal number two! Time for lunch.
Ingredients
- 90g gluten free flour
- 1 1/2 tablespoons of baking powder
- 1/2 teaspoon of salt
- 3 eggs
- 500 grams of corn
- 6 green onions
- 20g of cilantro
- 10g of diced green chili
- butter to fry
- guacamole
First, gather all of your ingredients. Chop the green onions, cilantro and the green chili (wear gloves if you’re sensitive). Also, I used can corn and it worked well.
Also, get our a 12 inch skillet – you’ll need a large pan to fry up 10 gluten free corn fritters.
Mix all of the ingredients together. It’s going to seem like there isn’t enough flour, don’t add more though. The baking powder will help fluff it up and they’ll be perfection.
Put some butter in a pan and let it melt. Once it’s all melted, move it around the pan and start forming the fritters.
Drop the fritters in the butter and fry for about 2-3 minutes until golden brown and then flip. I flipped mine back and forth to prevent burning.
You don’t want to undercook them, since then the centre will be all gummy and gross. Also, don’t put a lid on you’ll take away the crunch of the fritter.
Take out of the pan and eat with guacamole.
Done!
These little gluten free corn fritters are the perfect lunch meal – and they make great leftovers, too.
