Recipe: Greek Pasta Salad

Greek Pasta Salad: 3ten.ca

Greek pasta salad. Sounds delicious. Fresh and full of flavour. My mom made greek salad a few times when I was a kid for special occasions or if we were going to a summer potluck. Well, at work, a couple of times a year, I have staff meetings and I like to bring food. I sent out a message as to what they wanted – this time they wanted greek pasta salad! So, here it is. They loved it and ate it all up.

Ingredients:

  • 1/2 a large red onion
  • 5 roma tomatoes
  • 2 cucumbers
  • 500g of feta cheese
  • 1 jar of kalamata olives
  • 1 box of penne
  • homemade greek dressing

First, gather all of your ingredients. Put on a pot of boiling water and cook you pasta.

Slice up the onions as thinly as you can. Use a mandoline if you have one…I simply forgot to get mine out. Silly me. Cut the cucumber in half, lengthwise and then cut into chunks. Chunk the tomatoes, too. If you’re making this salad a day ahead of time, you might want to deseed the tomatoes – that will keep the salad from turing too soft. Next, cube up the cheese.

Dressing time. Be sure to use my homemade greek dressing recipe.

Once the pasta is cooked and cooled, add all of the ingredients together. Mix well and top with the dressing. Again, mix well.

Serve and eat!

Ingredients
  • ½ a large red onion
  • 5 roma tomatoes
  • 2 cucumbers
  • 500g feta cheese
  • 1 jar of kalamata olives
  • 1 box of penne
  • homemade greek dressing
Instructions
  1. First, gather all of your ingredients and put a pot of boiling water on the stove.
  2. While the pasts is cooking, thinly slice your onion.
  3. Wash the cucumbers and tomatoes and then cut into chunks.
  4. Get out the feta and cut into small cubes. You can crumble a bit, yet leave a lot of chunks...the cheese chunks are the whole reason we eat greek salad, right!?
  5. Once the pasta is cooked, rinse it and let it cool.
  6. Mix together all of the ingredients - even the olives.
  7. Top with dressing, mix well and eat up.
