Recipe: Pineapple Black Bean Salsa
Pineapple and black bean salsa. My corn salsa is so good, yet this is a great twist. I made it a couple of weeks ago for a potluck – luau themed! Hence, the pineapple.
This recipe is fresh, light, and super flavourful. Eat it on fish tacos, on chicken, or with chips.
Ingredients
- 1/2 a pineapple
- 2 cup of black beans
- handful of cilantro
- 1/2 red onion
- 2 garlic cloves
- limes
First, gather all of your ingredients.
Juice your limes – you’ll need about 1/4-1/2 cup of lime juice depending on your taste.
Time for the pineapple. Cut it in half, lengthwise. Core out the middle and save the pineapple to make a pineapple boat.
Dice the red onion and put in a bowl with the chopped garlic. Top with the lime juice (just add 1/4 cup to start). While that sits, dice up the pineapple you cored out. Don’t use the core, just the meaty fruit part. Add the pineapple and the black beans to the bowl.
Stir in the chopped cilantro and you’re all set. Taste and add more lime juice if you wish.
Store in the fridge for a couple of hours and then eat it up.

Pineapple Black Bean Salsa
Ingredients

- First, cut the pineapple in half lengthwise and core out the the fruit, leaving the pineapple shape intact. You'll use it later to serve out of.
- Next, juice your limes. You'll need 1/4 -1/2 cup.
- Dice your onions and garlic. Put in a bowl and top with 1/4 cup of lime juice. Let it sit while you work on the pineapple and cilantro. The lime juice will add flavour to the garlic and onion.
- Chop the cilantro and dice up the pineapple.
- Mix in the cilantro, pineapple and black beans in with the onion and garlic mix.
- Taste - add more lime juice if you need it.
- Eat it up.
